RECIPES  -  Mom's Latkes - Crunchy Potato Pancakes

3  lb potatoes                          Black pepper, to taste

2 eggs                                          Paprika, to taste

3 tbsp flour                              Vegetable oil (for frying)

1 onion minced                      Applesauce and/or sour cream 

Wash and peel the potatoes then grate them. Drain off all liquid and pat dry with a paper towel. 

  Drop Beat the eggs and mix with the grated potatoes and other ingredients except the oil. Heat about half of the oil in a skillet over medium heat until very hot. Drop potato mixture by heaping tablespoons into oil (about 4 at a time). Use a pancake turner to flatten out. Fry until golden brown on both sides (about 3 minutes) Drain off excess oil on paper towels.  Serve topped with applesauce or sour cream 


Mabel's Helpful Hints

 Uses for Garlic or Onion Skins

1.  Add extra nutrition to soups or stews.  Strain the skins out before serving

2. Mix in some onion skins when cooking rice to add extra vitamins.  Be sure to let them steep as the rice cooks.  Remove the skins before serving

3.  Mix into bread.  Add one teaspoon of ground onion skin to homemade bread dough

4.  Relieve muscle cramps.  Boil onion skins for 10-20 minutes making an infusion.  Drain the skins from the water and drink it as a tea.

5. Induce sleep. Brew up a cup of onion skin tea by simply pouring boiling water over several onion skins, cover and let soak for 15 minutes. Strain the tea or use a tea ball and then enjoy!

Can't use all your onion skins now? Freeze them.  Store skins in a plastic bag or freezer-safe container for later use
